The process of making CHURPI bars is completely handmade and natural. In the month of August, three lucky members of our team embarked on a trip to the Himalayan province of Sikkim. The aim was to visit the farms that make our CHURPI bars, understand the manufacturing process and meet the people who make this 100% natural product possible. The Himalayan province of Sikkim is located between Nepal, China and Bhutan. This province joined India in 1975 (formerly the kingdom of Sikkim) and today is the only Indian province where both agriculture and livestock are 100% organic production (FAO 2018), prohibiting the use of fertilizers, pesticides or other chemical components. The Origin of CHURPI Bars

At an altitude of approximately 3,500 meters, in around 500 villages, there are around 14,000 farms that produce 100% natural dairy products, including our CHURPI bars. During the monsoon season, local yaks and cows graze freely in the mountainous areas, providing the raw material for making our products.

Cheeses in Multiple Formats

In Sikkim, it is common to find roadside shops where you can see cheese sticks hanging as well as many other derivative forms, for human consumption. But our destination was not a store, but a farm lost in the middle of nowhere. Upon arrival, we confirm the logistical complexity of obtaining our CHURPI bars, an almost miraculous process!

The process of making CHURPI bars is completely handmade and natural. From the use of tarps to wrap the cheese in the pressing process to the production of the milk derivative “ghee” (liquid butter) in the bottle. An important detail is the smoking process, which lasts 28 days and gives our bars their unique flavor.

Processing Plant

After several days of sightseeing in Sikkim, we travel to the center of the country to visit the processing plant of our CHURPI. Bars collected in Sikkim arrive at this plant and undergo weight control, quality control and other processes that ensure the standards required for our products. The processing plant is ISO 22000 certified.
